Employee stabbed in the chest by a coworker

On January 26, 2003, Employee #1 was working on the fabrication floor at a meat processing facility when a coworker accidentally stabbed him in the left side of the chest. Employee #1 and the coworker were involved in removing the meat from what is known as the "paddle" bone (bovine equivalent of the forequarter shoulder blade). The coworker was cutting the bone from the leg bone as it went by on a chain conveyor system and placing them on a table. Employee #1 would then take the bone and strip the meat from the bone and discard the bone on a conveyor. Both employees were using 6 in boning knives. The employees work stations were approximately 4 ft apart. For an unknown reason, Employee #1 moved into the coworkers work zone. The coworker was in the process of moving a bone to the table with the right hand, which also contained the boning knife, and caught Employee #1 in the chest. Employee #1 was wearing a metal mesh apron which covered most of the chest, stomach and the thigh area of the legs. Employee #1 sustained a 1-in. laceration to the chest and a 1-in. laceration to the right ventricle of the heart. Employee #1 was transported to the hospital.
