Investigation Summary
On March 3, 2003, a hot oil fire was discovered in the kitchen area of a restaurant. Food that was being cooked in soybean oil in a pot overheated and caught on fire. An employee brought the pot from the Kitchen area to the dishwashing area and gave it to the manager. The manager put it on the floor of the dishwashing area and directed Employee #1 to add water quickly to the hot oil fire. Employee #1 added the water to the fire. The result was an explosion. Employee #1 was standing approximately 5 ft away from the pot when the accident happened. Employee #1 suffered second-and-third-degree burns on the arms, neck and face. Specific training and instruction on fire safety was not provided to the manager or the employees. Employee #1 was hospitalized.
