Abstract: On July 25, 2005, Employee #1, a kitchen worker, was emptying kettles containing hot chicken stock. The kettles are located in a row, about 4 to 5 feet apart, and stand on three legs. They are equipped with a valve and a nozzle that are positioned in the front lower half of their body, approximately 2 feet from the floor. When chicken is cooked, employees strain the chicken stock by placing an eighteen-quart bucket with a chinois strainer under the nozzle and open the valve. Each kettle holds about seven buckets of stock. Employee #1 stood in between two kettles, placing a bucket and draining the chicken stock from both simultaneously. He noticed that the bucket on his left side was full and, without closing the valve, he quickly replaced the filled bucket with an empty one. He placed the filled bucket behind where he was standing instead of to the side. As he attempted to change out the buckets on his right side, Employee #1 stepped backwards and into the bucket that was behind him. The hot chicken stock burned the skin on his left foot and ankle. Employee #1 was hospitalized and treated for second-degree burns, which required surgery.
